Bar Hack: Homemade Passionfruit Hootch

Ever wonder what to do with your passionfruit scraps? I’m here for you. Follow the procedure laid out in this blog post and you’ll impress your friends, stoke the fires of your haters, yes, yes, make your enemies even more jealous, and while you’re at it, be the envy of all onlookers. Yes, listen to my careful instructions and you can have it all. Yes, just like the fantastic tune from Yo La Tengo. Don’t know it? No worries. I’m here for you. And yes, I know, it was just a cover…I still like the YLT version because I’m a sucker for the little background voice going bum bum buh bah bah bum bum buh bah bah.

This came out quite delightful. Is there a such thing as too delightful? We’re entering into serious hedonism now…

I’m a little frazzled this morning, so I’ll try to do this as anti-ADHD as possible.

We’ve got the passionfruit syrup scraps, the seeds and other junk leftover from the straining process when we made syrup from the inside flesh of the fruit.

Those scraps went into a jar with 151 rum. Oh yeah. It sat for a while but at this high a proof it doesn’t really need to. I’d say a week and you’re good.

Next up, we’ve got the passionfruit trim syrup. This was made with the leftover husks. 5 pounds worth (pre-cleaning, so probably 4 or so after) 6 cups water, 6 cups sugar. This was all left to simmer and get sexy, then strained off, and the scrap from this was used to make passionfruit vermouth.

Ok. I think that went well.

Now, by volume, combine your infused passionfruit 151 with your passionfruit trim syrup. Go 1:1. So, 1 cup of the infusion and 1 cup of the trim syrup. Why volume instead of weight? No idea. It’s just how my brain works. I weigh syrups but do all infusions, batches, etc. by volume. I mix American with Metric but never use Celsius for anything.

That’s it. Yes, it’s sweet because it’s supposed to be, it’s a liqueur, dude. It’s also nice and semi-high proof at 755 (37.75% alcohol). If they serve potations in heaven, this would be some part of it.

If I were you, I’d make a rum daisy with this puppy.

Rum Daisy

1 oz. White Rum

1 oz. Dark Rum

.75 oz. Fresh Lime Juice

.75 oz. Passionfruit Liqueur

.25 oz. Rhum Agricole

Something like this. I haven’t experimented much with it, as it’s very new and exciting. We’ll see what happens in the coming days here.
