New Cocktail: Dreaming of Lee

This one’s still in the realm of R&D but came out pretty good last night. Angel and I were trying to figure out how to use the pastry’s chefs dregs, this makrut lime sherbet that is just a little too powerfully aromatic and floral. It’s not the first time makrut has shown up in our lives and not the last time it will frustrate us…But I think we found a solution. This has nothing to do with the cocktail here but I thought complaining about makrut lime was apropos for some reason.

So anyway, we’ve got all this double bock from the Czech Republic, it’s delicious but no one orders it so I through it into a weird shandy that tasted like Guinness on roids. I called it Dreaming of Lee for whatever reason but maybe it should be called “On the Sauce.” I woke up this morning thinking it may be even better with the addition of some Rico Pop bitters. We’ll have to see…And oh yeah, the sunchoke amazake went in here and it tastes great.

Dreaming of Lee

1 oz. Lemon Juice

.75 oz. Bourbon

.75 oz. Japanese Whisky

.5 oz. Noyaux

.5 oz. Sunchoke Amazake Syrup

.25 oz. Lemon Sherbet

Add about four ounces of double bock to a rocks glass with little cubes, shake, strain, quaff.
