Want to infuse some life into your…Uh…Life? Ok, maybe you don’t. Maybe you want to do it for your drinks though…This ingredient is featured in one of our recent seasonal cocktails, Tooger’s Revenge, which is gaining some steam…We had a guest in last night who told us, “I normally drink wine, but I’d love to try a cocktail.” Denise convinced her to try a Tooger, and the person chugged it down, smiled, gushed over the cocktail, and was sat at a table of late arriving friends who all ordered several more throughout the night. A huge victory for rum in sleepy Santa Monica!
Yes, I’m aware of the original leche de tigre, the ingredient for Peruvian ceviche. This is something else.
Leche de Tigre
2 parts Condensed Milk
1 Part Coconut Milk
1 Part Raw Fruit
So, for the confused: 1000 grams condensed milk, 500 grams coconut milk, 500 grams seasonal fruit. It’s better if the above ingredients are organic so you’re not ingesting Monsanto’s finest.
Blend it all up and pass it through a chinois.
This works great with rum drinks, aged or unaged, but also as a base for a delicious non-alcoholic bevvie. Add some lime juice, sparkling water, some ice, stir it up, and you’re ready to go. If you want to get crazy and shake this up with some rum and even add falernum or even…Bananum, I definitely sign off on that. You should do it.
